Does Its Job WellI just used this double boiler for the first time to make some ganache and it turned out perfectly. As someone who has worked with double boilers in the past, I know that you don't need a whole lot of water in the bottom part but enough so that it doesn't boil down, you need to heat it on a low to medium flame (which means being patient) and you need to get in there and stir quickly once things start happening, and everyone who has ever tempered chocolate will know what I mean! After I poured out the ganache, I poured some of the remaining hot water into the top to clean it out. Some of the chocolate still stuck, but I suspect that may be due to my inexperience with a whisk (I always used a big spoon in the past, which worked fine) so I'll just let it soak a bit. This double boiler is just what I am looking for - I bought it solely to work with chocolate, custard and so on. It will do the job and do it well, and it's good looking besides! 5Cheap. Burns food. Edge catches food.This is a terrible double boiler. Although the bottom pan is OK, the top pan is ultra thin, food sticks, and you cannot start cooking in it directly because it burns badly because it is so thin. Also, the only reason the upper pan doesn't fall into the lower pan is because of a shelf shape of the side. This catches any food that you are cooking in the top and you cannot mix it in. It may look like shiny stainless steel but it cooks like cheap aluminum.I most often use a double boiler to make 7-minute frosting. It is not possible in this pan for several reasons. First, the shape of the bottom of the pan is too square for the beater to reach. Second, as mentioned above, food gets caught in the lip of the pan. Third, food sticks to the surface like it was aluminum.I also slow cook foods in it, but start by heating the food directly in the upper, double boiler to get it pre-heated before I leave it to steam. The food burns to the bottom and after one use, the pan is stained and uncleanable. 1Exactly what I was looking for...First, I'd like to say, I'm very confused about the other reviews on this product. The top part of a double boiler is generally a glass bowl or aluminum pan or bowl. It should never be non-stick. You want to be able to use all kind of tools when double boiling, like an electric mixer, when making egg white based frostings. A non-stick surface would chip and scratch and get into your food. So, having said that, this is exactly what I have been looking for in a double boiler. A light weight top pan over a heavier more durable bottom pan. The lid fits perfect over both pans and the non stick pan has a really nice finish that doesn't look like it will chip or peel (with proper care). I will update on durability if anything goes wrong after using it for a while. 5Works well but seems backwardsBought this double boiler primarily for heating milk for homemade yogurt. It works well for that purpose in that it holds 2 quarts of milk, the milk does not burn on the bottom, and there is a small hole in the lid that is perfect for inserting a thermometer. There is one thing that puzzles me, though. The bottom pan, where water goes, is nonstick. The top part, where food goes, is not nonstick. This seems backwards to me. But the double boiler functions and cleans up well, so I can't really complain. :) 5Inexpensive but does the jobThis worked perfect for me. I bought it to melt some chocolate for Oreo balls. The top pan is a little on the thin side but I might only use it once or twice a year. I think if you plan to use if often, you may want to go with something more heavy duty. It's true, the top doesn't seem non stick but I also had no issues cleaning it. And, it does have a lip in the top pan so that it will fit down in the bottom pan without falling in, but the groove is large enough to clean with a regular sponge and the chocolate melted just fine without any issues. It is larger than I realized though. Most double boilers are 2 qt and this one is 3 so just factor that in. Overall, it's a very basic double boiler but for lightweight use I think it's worth the money. 5I like this Double Boiler okI like this Double Boiler ok, but I was quite surprised that the so called Stainless Steel feature, wasn't very solid stainless steel. It's very light weight, not like the stainless steel, I've been accustom to... Let me explain : I have several heavy stainless steel cookware pieces that I brought in the mid 1990's and there is quite a lot of difference in the quality of my old stainless steel cookware than there is in this new 'stainless steel'. It's not going to be a big deal for me however, because I don't plan to do a lot of cooking with this Double Boiler , melt cheese is the only reason I bought it, but I wouldn't be very happy if I had bought a skillet and it was made in this same 'stainless steel' as I'm sure that skillet would not distribute the heat evenly which is so important in frying . 3The perfect large capacity double boilerI use a double boiler for melting chocolate all the time, but most are too small to hold more than 2 cups. This double boiler is the solution to that problem - the top pot fits perfectly into the bottom one and when you don't need a double boiler, the bottom pot is great for making pasta, pierogi, soups and more. It's non-stick and heats up evenly, but I wouldn't recommend using the top pot directly on a hot surface (that's strictly for double boiler function use).While I'm sure you can put this into the dishwasher, none of my pots / pans / skillets ever do. It ruins the surface and looses that non-stick surface over time, so I always hand-wash. 5Good double boilerI purchased this for my mother who is starting to get into candle making and needed a double boiler to melt wax with. I bought this particular one because all my mom needs is a simple, inexpensive pot.I was impressed with how sturdy and solid the pots feel. The melting pot sits snugly and securely onto the bottom pot due to a flange (ring) around the bottom of it. The bottom pot is non stick and can be used as a regular pot complete with glass lid. The handles are comfortable and feel sturdy in the hand.Overall I think I got a pretty good value with this and my mom is happy as well :) 4Great for Chocolate meltingThis is wonderful! I use this to melt chocolate. IT HOLDS A LOT!! If you like to melt chocolate this is perfect for you.How to use: Put water in the bottom pot, (do not fill the pot and do not let the water be high enough to touch the bottom of the top pot), boil just the bottom pot. Once you get a small boil (you will start to see steam) put the top pot on and turn off the heat. Add your chocolate and stir (remember chocolate keeps its form when slightly melted so you need to keep on stirring), if you need to get a little more heat you can turn it on low, but then turn it off, do not leave it on.PROS: Lightweight but not too lightweight to be cheap at allTop fits nicely in the bottom potComes with a lidCONS: (Not a big deal)This isnt a big deal and do not let this prevent you from buying this, this is just more of a pain.There is a inverted lip inside the pan (its so the top can fit into the bottom) so not a flawIt can be a pain to get all that chocolate out of it, but I use hot water and sprayer to get it out, but you need to scrub. 5Great for my diy projects!Love this! It was on sale when I bought it, normal price is a little high. I make my own lip balms, lotions and soaps as well as other things and I really wanted one of these. Before I bought it I was just placing a glass measuring cups with my ingredients in it inside a pot of boiling water which worked too but this is better! 5
